In short, they can remove their card or cancel in their customer portal. This will mark the subscription as "cancelled" in Monto for future subscriptions' status.

If you want to filter through these to ensure a high touch experience, you can turn off the customer portal and require all cancellations to go through your customer support. This way you could verify the reason for cancelling, whether they have any outstanding invoices or due shipments, etc.
